Ingredients for Meringue nests:
- 112 gr egg whites
- 150 gr sugar
- 1 tsp cornstarch
- ½ tsp vinegar
How to make Meringue nests:
It is very important to use a bowl and beaters that are well-cleaned and dried, to prevent the egg whites do not reach the stiff peaks.
Put the egg whites in the bowl of the mixter and beat at medium speed until the egg whites are foamy. Gradually, while beating, pour in all the sugar. Then add the vinegar and the cornstarch and continue beating until the egg whites form stiff peaks when you lift the beaters out of the egg mixture.
Preheat the oven to 100 ºC.
Prepare a baking sheet with parchment paper and trace six circles with a pencil. turns over the paper (so that the pencil is down). Gently transfer the meringue to a clean pastry bag.
Starting at the center of each circle, do a circle of meringue; then do 2-3 additional layers on top of the border. Obviously, the more you do, the deeper each nest will be.
Put the nests in the oven and bake for 90 minutes, then turn off the oven and leave the meringues in the oven all the night.
Put the meringues in an airtight container until use.
