Ingredients for toffee, hazelnuts, chocolate chips and coconut cookie bars:
Toffe filling:
- 150 gr vanilla caramels
- 200 gr sweetened condensed milk
- 4 Tbls (60 gr) unsalted butter
Cookie dough:
- 40 gr unsalted butter
- 50 gr coconut oil
- 180 gr brown sugar
- ¼ cup (60 gr) creamy peanut butter
- 1 egg
- 1 cup (130 gr) flour
- ½ cup (45 gr) old fashioned oats
- 1 tsp baking powder
- ½ tsp salt
- ½ cup (85 gr) chocolate chips
- 1 cup (75 gr) hazelnuts
How to make toffee, hazelnuts, chocolate chips and coconut cookie bars:
Preheat oven to 350 degrees (180 °C) and line a baking dish with parchment paper.Toffe filling: Unwrap caramels and place in a small saucepan with butter and sweetened condensed milk and cook over medium-low heat. Stir occasionally, until caramels are melted and the mixture is nice and smooth. This process will take a few minutes.
Cookie dough: Melt the butter and coconut oil a few seconds in the microwave. Add the sugar, mix well and add the peanut butter and egg. Finally add the flour, old fashioned oats, baking powder and salt; mix until smooth cookie dough.
Assemblage: Cover the bottom of the pan with 1/2 of the cookie dough. Sprinkle half of chocolate chips and half of the slightly crushed hazlenuts. Slowly pour caramel mixture evenly over the dough. Finally, drop the remaining dough on top (it doesn’t have to be perfect) and sprinkle more chocolate chips and hazlenuts.
